I have to give my mom credit for finding the base for these cookies. She made them a few weeks ago when I was home visiting and I couldn’t stop thinking about how much they tasted like the Girl Scouts peanut butter sandwich cookies afterwards.
When I got home I whipped up an easy peanut butter frosting, smooshed two cookies together, and sunk my teeth into, quite possibly, the perfect peanut butter cookie.
